Shuga's Is the Restaurant Colorado Springs Can't Stop Talking About

Shuga's has 4,000 Yelp reviews. Four thousand. For a restaurant in a sliver of a building on South Cascade Avenue in Colorado Springs. That doesn't happen by accident.

What happens is: you go once, you tell three friends, and those friends tell three friends, and suddenly there's a 45-minute wait on a Tuesday for a restaurant that seats maybe 60 people.

Dishes at Shuga's Colorado Springs

The Food

Shuga's calls itself "eclectic globally inspired." That's the kind of description that usually means "we can't commit to a cuisine." At Shuga's, it means the chef actually knows how to cook across traditions โ€” and the menu is better for it.

The Korean BBQ tacos are the signature. Bulgogi beef, kimchi slaw, gochujang aioli, in a flour tortilla. It shouldn't work โ€” Korean filling, Mexican vessel, Japanese-adjacent sauce โ€” but it does.

The green chile mac and cheese is the other must-order. Hatch green chile, three cheeses, breadcrumb crust. It's comfort food with a Colorado accent. Every table seems to have one.

The Space

Inside Shuga's

The building is narrow. Almost comically narrow. But the designers turned that constraint into character โ€” it feels intimate without feeling cramped. There's a small bar area, a handful of two-tops, and a patio that doubles the seating in summer.

The decor is eclectic in the same way the food is. Bright colors, local art, mismatched furniture that somehow works together. It feels like someone's very cool living room, if that living room served craft cocktails.

The Cocktails

The cocktail program is serious. Not "speakeasy with a $22 old fashioned" serious โ€” "creative bartenders who actually care" serious. The menu rotates, but they always have something with mezcal, something with bourbon, and something fruity enough that the person who "doesn't like cocktails" ends up ordering two.
